Thinset coverage depends on the trowel notch, because the notch decides how much mortar is left on the substrate.

Those are working figures on a flat substrate. An uneven floor consumes considerably more, and a badly uneven floor should be leveled rather than filled with thinset.
The coverage rule that governs everything
ANSI A108.5 requires 80% mortar contact for dry interior floors and 95% for wet areas and exterior work.
That is the specification your trowel choice has to satisfy, and it is why you cannot simply use a smaller notch to save mortar. Pull a tile up after setting it and look at the back: if the ridges have not collapsed into continuous coverage, the notch is too small or the mortar has skinned over.
Back-buttering
For tile over about 15 inches on a side, ANSI A108.02 effectively requires back-buttering — a thin skim of mortar on the back of the tile as well as the notched bed on the floor.
Large tiles are slightly cupped and the notch ridges alone leave voids under the center. A void under a large tile is where it cracks the first time something heavy lands on it.
Back-buttering adds roughly 30 to 40% to thinset consumption. Budget for it rather than discovering it mid-job.
Directional troweling
Comb the ridges in straight parallel lines, not swirls, and set the tile perpendicular to the ridges. Straight ridges collapse and let air escape sideways. Swirled ridges trap air in pockets, and those pockets are voids.
Open time and skinning
Modified thinset skins over in 15 to 30 minutes depending on temperature and humidity. Mortar that has skinned will not bond, and the tile sits on a dry crust.
Spread only what you can tile in that window — usually 6 to 10 ft² at a time — and check by touching the ridges. If mortar comes off on your finger it is live; if it does not, scrape it off and re-comb.
Modified or unmodified
Unmodified (ANSI A118.1) is portland cement, sand and water retainer. Required over most uncoupling membranes, because it cures by hydration and a sandwich between two non-porous layers will not dry.
Modified (A118.4, A118.15) adds polymers for bond strength and flexibility. The default for porcelain, large format, and over plywood.
Check the membrane manufacturer's instruction. Using modified where unmodified is specified is a common failure, and it does not show up for months.
