Bigger tiles need a thicker mortar bed, because bigger tiles are less flat and sit on substrates that are less flat relative to their span.

Notch shapes are not interchangeable
V-notch lays down the least mortar. It suits mosaics and small wall tile, where the thin bed is enough and a thick one would squeeze out through the joints.
Square-notch is the general-purpose shape and covers most floor work. The ridges collapse predictably into a fairly even bed.
U-notch holds more mortar per ridge than a square notch of the same nominal size and releases it more readily under a heavy tile. It is the large-format choice.
The chart is a starting point
Two things move the answer away from the table.
An uneven substrate needs a larger notch to bridge the variation. There is a limit — thinset is not a levelling compound, and past a point the floor needs fixing rather than the trowel changing.
Tile with a heavily ribbed back eats mortar in the ribs before any of it reaches the flat. Some porcelain has deep back patterns that effectively consume a notch size, and the fix is to go up one.
The test that actually settles it
Set a tile normally. Lift it immediately. Look at the back.
You are looking for 80% contact on dry interior work and 95% in wet areas, exteriors and on large format. Look especially at the corners — that is where contact fails first, and corners are where tiles chip when they are unsupported.
If contact is short, go up a notch size or start back-buttering. If mortar is squeezing up between the tiles in quantity, go down one.
Do this on the first few tiles, and again whenever the tile size, the substrate or the bag changes. It takes seconds and it is the only measurement that reflects your actual materials.
Trowels wear out
The notches round off with use, and a worn trowel lays a thinner bed than its marking claims — quietly, over the course of a large job.
A trowel that has done several hundred square feet of porcelain is not the trowel it was. They are cheap; replace them rather than compensate.
Holding angle
Hold the trowel at a consistent angle, around 45 degrees, so the notches actually touch the substrate and form full-height ridges. Held flatter, the ridges are shorter than the notch suggests and coverage falls short of every figure on this page.
