The trowel notch is not chosen from a chart. It is chosen to achieve a coverage requirement, and the chart is only a starting point.
ANSI A108.5 sets it: 80% mortar contact for tile in dry interior areas, 95% for wet areas, exteriors, and anything subject to freezing — with full support under corners and along edges in every case.
The check that actually decides it

Set one tile the way you intend to set the rest. Immediately lift it and look at the back.
If the mortar transfer covers less than the requirement, or the corners are bare, the notch is too small or the mortar has skinned over. Increase the notch, or work in smaller sections, and try again.
Do this at the start of every job and again if the mortar, the tile or the substrate changes. It takes two minutes and it is the only measurement that matters.

These are starting points. A slightly bowed tile or an uneven substrate both need more mortar than the table suggests, and both are common.
Ridges run one direction, and it matters
Comb the mortar in straight parallel lines, all in the same direction, and set the tile perpendicular to them with a slight sliding motion so the ridges collapse and spread.
Swirls trap air. A swirled bed leaves voids that no amount of pressure removes, and those voids are where a tile cracks later under a point load.
On a plank tile, run the ridges across the short dimension so air can escape along the length.
Back-buttering large format
Any tile with a side over about 15 inches wants mortar on the back as well as the substrate. A thin skim coat, pressed into the back with the flat of the trowel, fills the tile's own texture and its slight factory bow.
This is not optional on large format — it is how the 95% figure gets reached in a wet area, and it is why large tile takes noticeably more mortar per square foot than the bag coverage table suggests.
Skinning is the silent failure
Mortar begins to cure as soon as it is spread. Once a skin forms on the ridges, the tile no longer bonds to it — the tile sits, looks fine, and is bonded to nothing.
Open time depends on the product, the temperature and the airflow. In a hot, dry or breezy room it can be a few minutes. The test is to touch the ridges: if mortar transfers to a finger, it is live; if the surface is dry to the touch, comb it back out or remove it.
Spreading more than a few square feet ahead of yourself is the usual way this happens.
Mortar type matters as much as the notch
For anything large or heavy — over 15 inches on a side — the right product is an ANSI A118.15 improved polymer-modified mortar, often sold as LHT or large-format mortar. It is formulated not to slump under the weight of the tile, which is what allows a thicker bed to hold the tile where it was set.
Using a standard A118.1 mortar under a large tile produces slow sinking on one edge and lippage that appears the next morning, after the room is finished for the day.
The two-minute version
Start with the notch from the table, set one tile, lift it, and look. Adjust until the back shows the coverage the location requires. Comb straight, set perpendicular, back-butter anything large, and never spread further ahead than you can tile before the ridges skin over.
